VEGGIE PASTIES

This recipe was inspired by the Redwall series of books by Brian Jacques. These pasties are perfect for using leftovers or remnants of veggies or meat in the fridge. If using meat in a pasty, sear or brown the meat before putting in the veggies.

Pasties:
1 pkg. refrigerated pie crust
1/4 c. diced celery
1/2 c. shredded or chopped carrots
1 clove garlic, chopped
4 oz. cream cheese
1 c. chopped broccoli
1/2 c. cooked mushrooms
2 Tbsp. olive oil

Gravy:
3 c. vegetable, chicken, or beef broth
1 Tbsp. butter
1/4 c. flour

For pasties, mix all vegetables and seasoning with olive oil in a large bowl. Keep cheese separate for now. Split each pie crust in half (you should have 4 half circles). Stuff each half circle with vegetable mixture. Top each half with 1 oz. cream cheese broken in to small chunks and 1/4c. of cheddar cheese. Fold the pie crust and seal tightly. Cut small slits into the dough to vent steam. Bake in a 375 degree oven for 45 minutes or until golden brown. Serve pasties with gravy on top.

For gravy, melt the butter. Stir in flour until it forms a paste. Warm the broth until steaming, then add the mixture until dissolved and broth is thickened.

SEVEN-LAYER SALAD

This salad is a very simple and lovely addition for a holiday dinner or any special occasion.

Salad:
1 small head lettuce, torn into bite-sized pieces
2 c. celery, finely chopped
1 medium onion, very finely minced
2 c. green pepper, finely chopped
1 lb. pkg. frozen green peas, cooked and cooled
12 to 16 oz. shredded cheddar cheese
1 lb. bacon, cut into 1" pieces and then cooked until very crispy, drain

Dressing:
1 1/2 c. mayonnaise
2 to 3 tbsp. sugar, adjust to taste
2 to 3 tbsp. milk, adjust to desired consistency
2 tsp. celery seed

In a large deep glass bowl, layer the following ingredients in order: lettuce, celery, onion, green pepper, green peas, cheese and bacon. Pour dressing on top just before serving. Do not toss!

Danish  Red Cabbage

Prep Time: 30 minutes    Servings: 12      Cook Time: 1 hour

Ingredients: 1 small red cabbage, cored and shredded, 2 cups white vinegar, 2 teaspoons salt, 2 cups white sugar, and 3 cups water.

Directions: Place the cabbage in a large saucepan, and stir in the sugar, vinegar, salt and water. Bring to boil, then cover and simmer over medium heat for 1 hour. This can be served immediately, or chilled and reheated later in smaller portions.

Stuffed Celery

Prep Time: 15 minutes    Servings: 16      Ready in: 15 minutes

Ingredients: 1 (8 ounce) package cream cheese, softened, 20 green olives with pimento, chopped, 2 tablespoons sour cream, 1 bunch celery, cut into bite-size pieces, and ¼ cup chopped walnuts.

Directions: In a medium bowl, mix together the cream cheese and sour cream. Stir in the walnuts and chopped olives, spread filling onto celery pieces. Also try on crackers.

Red Edge Roll-Ups

Prep Time: 5 minutes

Ingredients: 4 teaspoons sugar, ¼ teaspoon cinnamon, 4 flour tortillas (8 inch), 1-cup low-fat cottage cheese, 2 cups (about 10 ounces) quartered Stemmed California strawberries

In a small bowl, combine sugar and cinnamon. On griddle or skillet, heat tortillas. Place ¼ cup cottage cheese center of 1 tortilla; top with ½ cup strawberries. Sprinkle with 1-teaspoon sugar and cinnamon mixture. Fold up bottom third of tortilla, then fold in both sides, leaving top open. Repeat with remaining ingredients to make 4 wraps. Makes 4 servings.

Strawberry & Turkey Panino

Prep Time: 5 minutes Cook Time: 5 minutes

Ingredients: 1 sweet baguette (about 10 ounces), ¼ cup strawberry preserves, 1 cup (about 6 ounces) sliced stemmed California strawberries, ½ cup baby spinach, 4 ounces cooked turkey breast, thinly sliced, Salt and pepper, 4 ounces Gruyere cheese, sliced.

Cut baguette in half horizontally. Spread cut surface of bottom half evenly with preserves. Arrange strawberries in one layer on top of preserves; layer spinach on top of strawberries. Layer turkey on top of spinach; season with salt and pepper. Layer cheese on top of turkey; place top half of baguette over cheese, cut side down. Cut baguette into 4 equal pieces. Heat on griddle or in skillet with weight on top, turning once, about 5 minutes or until cheese is melted and baguette is crusty. Makes 4 servings.

Strawberry Ginger Refresher

Prep Time: 5 minutes

Ingredients:1 cup frozen whole sweetened California strawberries , 1 (8-ounce) can unsweetened pineapple chunks, with juice, ½ cup soy milk, 1 tablespoon honey, ½ teaspoon grated ginger, In blender, combine all ingredients and puree until smooth. Makes 1 (16-ounce) serving
